How to brew delicious smoked sencha tea

What you will need

A kyusu or teapot

2 to 3 g tea leaves (1 to 1.5 teaspoons)

Boiled water ...100Ml

 

Transfer the boiled water to a teacup or other container to lower the temperature.

Pour the tea leaves into a kyusu or teapot, pour the hot water from the teacup, cover with a lid, and wait 1 to 1.5 minutes before pouring.

For the first cup, allow the water to cool slightly to allow the flavor of sencha to be extracted.

After the second cup, pour boiling water and enjoy the aroma.

What you will need

Teapot or kyusu

Tea leaves ... 3g (1.5 teaspoons)

Boiled water ... 150Ml

 

Put the tea leaves in the teapot and pour boiling water all at once.

Cover and wait 2.5 to 3 minutes before pouring into a cup.

Hiraoka-en is in Santomi area, which was developed by Kawagoe-han(the local government) in the 17c. It sticks to tea cultivation based on natural farming. It was registered as a historical heritage of Japanese agriculture because of its tea plantation in the shape of thin rectangles. “Hokumei” is a rare variety even in Sayama. It is well balanced in umami, sweetness, astringency, and bitterness. You will be satisfied with the taste.

80Ml of boiling water

 

Put the tea leaves in the teapot.

Transfer the boiled water to another container or teacup.

Pour the slightly cooled water (about 80°C) into the teapot and wait one minute before pouring it into the teacup.

For the second brew, pour in hot water at a higher temperature (about 90°C), wait 30 seconds, and enjoy a more aromatic tea than the first brew.
